What is Matcha?

Matcha Green Tea is the highest quality powdered green tea available. Made from the nutrient-rich young leaves picked from the tips of shade-grown Camellia sinensis plants, Matcha Green Tea is steamed, stemmed, and de-vined before being stone-ground into very fine powder. Matcha Green Tea powder is then stored away from light and oxygen in order to preserve its brilliant green color and antioxidant properties. This miracle elixir has been consumed for over a millennium in the Far East, and is now considered to be one of the most powerful super foods on the market today.

Matcha history

In China during the Tang Dynasty (618–907), tea leaves were steamed and formed into tea bricks for storage and trade. The tea was prepared by roasting and pulverizing the tea, and decocting the resulting tea powder in hot water, then adding salt. During the Song Dynasty (960–1279), the method of making powdered tea from steam-prepared dried tea leaves, and preparing the beverage by whipping the tea powder and hot water together in a bowl became popular.

Preparation and consumption of powdered tea was formed into a ritual by Chan or Zen Buddhists. The earliest extant Chan monastic code, entitled Chanyuan Qinggui (Rules of Purity for the Chan Monastery, 1103), describes in detail the etiquette for tea ceremonies.

Zen Buddhism and the Chinese methods of preparing powdered tea were brought to Japan in 1191 by the monk Eisai. In Japan it continued to be an important item at Zen monasteries, and became highly appreciated by others in the upper echelons of society during the fourteenth through sixteenth centuries.

HOW TO TAKE MATCHA?

To make matcha green tea, simply blend 0.5-1 teaspoon of 100% matcha powder and a small amount of hot water with a spoon to make a smooth paste. Add more water and sweetener as desired.

You can also use a traditional bamboo whisk. Sift a teaspoon of matcha powder into a tea bowl. Gently pour in three ounces of 175°F water. Using a bamboo whisk, whisk rapidly in an MW/zig-zag motion until frothy. The result is a hot, frothy  concoction that is all at once sweet and grassy, occasionally with a hint of bitterness. 

In addition to drinking matcha both warm and cold, there's no shortage of creative uses for the powder: infused into cocktails, whipped into lattes, dusted atop savory dishes, and mixed into any number of sweets from macarons to mochi, and cakes to doughnuts. The naturally sweet, grassy notes adapt well to food and drink making it a memorable flavor to showcase in a wide range of creations.

Store in a cool dry place for up to 24 months. Refrigeration is not needed.
